  2. Take of red onion.
  3. Prepare of garlic clove.

This delightful recipe was created as a way of salvaging bread that was about to go stale. Steps to make Bruschetta :

  1. Pulse the red onion and garlic in a food processor until finely chopped..
  2. Add the tomatoes to the processor and pulse until roughly chopped..
  3. Add basil leaves. You may need to decant some of the tomatoes as I only have a small food processor! Then add a drizzle of olive oil and balsamic vinegar..
  4. Lightly toast the bread on both sides under the grill..
  5. Assemble your bruschetta and enjoy!.

DIRECTIONS In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper. Slice the bread into individual pieces and spoon the mixture on top.
